Recette de Pancake (Emily)

Combine and mix with a fork
1C flour
3tsp sugar
2tsp baking powder
1tsp salt
optional nuts, cinnamon, nutmeg

Then in a separate bowl, combine and mix well with a fork
1C milk
1 egg
6tsp (=2 Tbsp) oil

Add the wet to the dry. and mix with the fork until just mixed (should still have lumps).  Pour into a med-low pan, lightly greased with butter.  After a few minutes, you will see bubbles rise through the pancake.  When the bubbles are almost all popped, it's time to flip the pancake.  Cook for about 2-3 minutes longer on the 2nd side, until golden brown.  Remove to a paper towel or other cloth.  Remove any dark butter from the pan, apply more butter, and make the next batch.  You can keep the pancakes warm in the oven if you like, or eat them as they are finished.  Enjoy!
